Al has been in the kitchen since his early teens.  He started Dinner Express Catering over a decade ago and is a favorite on the Lower Eastern Shore of Maryland, and in Sussex County, Delaware. Through the years he has mastered several cuisines and cooking styles.  He believes in bold flavors but is partial to Cajun and Caribbean cuisine. He loves to accompany meals with salsa, chutneys, and unique sauces. 

Al is the Nutrition Program Manager for MAC, Inc and oversees the Meals on Wheels program for the lower Eastern Shore of Maryland.  They feed over one thousand senior citizens daily.  Al is also a member of the Lower Eastern Shore Food Advisory Council and is a big proponent of the ‘FOOD IS MEDICINE’ concept. 

In recent years Al has taken a special interest in creating one-bite hors d’ oeuvres. Stop by and try his Honey Sriracha Shrimp for the Chefs for Habitat event, March 7, 2026, at the Wicomico County Youth and Civic Center.
